How to make macaron tea

  • If it was a gas oven, set it to 150°C and if it was electric, set it to 140°C and heat it.
  • We spread oil paper on the bottom of the oven tray and grease it.
  • First, beat the egg whites with an electric mixer until fluffy; Then slowly add granulated sugar to the egg whites and continue mixing until it becomes foamy.
  • Grind powdered sugar and almond powder together and mix well, making sure that it does not become pasty due to the almond fat.
  • Add color, dry ingredients and dry tea to the egg whites in three stages with a spatula.
  • We pour the mixture into the funnel and put circles with a diameter of three to four centimeters on the paper; We knock the tray on the table several times and let it rest for 30 minutes at room temperature so that the top of the macarons is not sticky; then we cook it for 20 minutes on the middle shelf of the oven.
  • We use cream or white ganache cream between the tea macarons after baking.

Tea macarons are those types of macarons that are made with Earl Gray tea. We suggest Earl Gray Debsh tea (due to its bergamot flavor).
